Does no churn ice cream taste the same as regular ice cream?

No churn ice cream is sweet and creamy, but it's not quite as rich as traditional ice cream. Homemade ice cream, in general, typically has a different taste than store-bought ice cream due to a lack of preservatives and artificial flavouring.

In addition, churned ice cream bases often contain egg yolks for richness. No churn ice cream does not contain eggs, which makes for a lighter flavour that's kissed with a hint of caramel taste due to the condensed milk.

Ingredients

Chocolate Chip Cookies- You'll want to use high quality cookies when making ice cream sandwiches. They should be thick to avoid crumbling and not overly soft so they keep their structure when the ice cream is added.

Double Cream- This provides the main base for the ice cream. For the best results when whipping, it should be very cold when you go to use it. Cold cream is more stable and whips faster than a cream that has begun to warm. You can even place it into the freezer for 10-15 minutes prior to whipping to make sure it whips just right. If you don't have double cream on hand, feel free to use heavy cream.

Condensed Milk- Condensed milk, also known as sweetened condensed milk, is an ingredient commonly used to add richness to desserts. It's a thick golden liquid made by cooking down milk and adding sugar. It has a hint of caramel-like flavour and adds the perfect amount of sweetness to this ice cream recipe.

Vanilla Bean- Vanilla beans add the fresh vanilla flavour that makes this ice cream shine. Substitute 1/2 of a vanilla bean with 1 teaspoon of vanilla extract or vanilla paste if you don't have a fresh vanilla bean on hand.

Chocolate Chips- The chocolate chips make for an extra indulgent finish for these creamy ice cream sandwiches. Mini chocolate chips are ideal because they're easier to bite down on. Feel free to swap them for sprinkles, crushed toffee pieces, M&M's or nuts.

How to Make No Churn Ice Cream Cookie Sandwiches

Prep time: 10 minutes

Freeze time: 6+ hours

Yield: 4 cups of ice cream, about 6 ice cream sandwiches

Ingredients


500 millilitres cold double cream

400 grams condensed milk

1/2 vanilla bean

175 grams mini chocolate chips

Directions

1. In a large bowl, use a hand mixer to whip the cream until stiff peaks form, about 5-6 minutes.

2. Pour in the condensed milk. Cut open the vanilla bean pod and use a spoon to scrape it into the bowl. Continue to mix for 1 minute, then fold the mixture with a rubber spatula until well combined.

3. Scrape the mixture into a 20 cm by 10 cm loaf pan and smooth it into an even layer. Cover with a layer of plastic wrap and gently press the plastic so it sits right on top of the ice cream mixture.



4. Cover with an additional layer of plastic to ensure it's completely covered and protected.

5. Freeze for at least 6 hours or until the ice cream is a firm texture. You may freeze slightly less for a soft-scoop version. If it's overly firm, allow the ice cream to sit out for 10-15 minutes before scooping.


6. Place a scoop of ice cream onto a cookie, then top it with another cookie. Press the cookies together slightly until the ice cream reaches the outer edges.

7. Pour the mini chocolate chips onto a plate and roll the edges of the cookie sandwich to coat it evenly with the chocolate chips. Enjoy your treats immediately or wrap them tightly in plastic wrap and place them back into the freezer to store for later.

Use cold ingredients- Cold double cream makes for the best whipped cream. You can also freeze the bowl and beaters for 10 minutes before whipping.

Wrap your ice cream well- Your no-churn ice cream should be wrapped tightly in plastic wrap and stored in the freezer. This will prevent ice crystals from forming, which is important because ice crystals can negatively affect the taste and creamy texture.

Brief thawing may be necessary- Allowing your ice cream to thaw for 10 minutes on the counter will make it easier to scoop. Storebought ice creams use gums and other additives to make them immediately more scoopable. Homemade ice cream often requires just a bit of warming for that extra yummy scoop that's made up of the perfect creamy consistency.
